In my goal of preparing healthy home-cooked meals for my family, I’ve been doing a lot of meal planning lately. I installed an app on my iPhone where meal-planning is much easier done. I can browse for healthy recipes either for breakfast, lunch or dinner, snacks, side dishes or drinks, then save them on my list and it automatically fills in my shopping list which is great because then I would know what ingredients I would need – I can delete the ones that we already have and know the ones that I need to buy at the store. Such a convenient app!
I found this avocado and tomato salad which is really perfect for either lunch, snack or side dish. I prepared this and had it for snack one afternoon last week. Both the hubs and I loved it! I’ve always loved avocado as well as tomatoes, but I’ve never tried mixing them together.
If only our son would not be super picky and eat this too then I would be one super happy mommy! 🙂 But I was also a picky eater when I was little so I believe he will also love vegetables later on as much as I do now.
I did tweak the recipe that I found just a little because I prefer using lemon rather than lime. Also, I decided to cut the serving because it’s only me and the hubs who are going to eat it. I figured we only needed one avocado and I was right, it was more than enough for us.
Here’s the recipe for you to try:
- 10 grape tomatoes, halved
- 1 small avocado, diced
- 1/2 small red onion, diced
- 1 tbsp dried cilantro (you can use fresh chopped cilantro if you desire)
- 1/2 lemon
- 1/2 tsp olive oil
- pepper to taste (you can also season it with salt if you want)
- Mix all the ingredients together and toss. Enjoy!
